When prepping your Thanksgiving dessert menu, you’re likely to include notes of apple, pumpkin, and cranberry — and maybe even pecan and chocolate and cherry. But Giada De Laurentiis just took a citrusy turn with her Thanksgiving pie that has our mouths watering.
The unique pie flavor the Giadzy founder is planning this year is none other than lemon! Yes, the slightly sour, summertime flavor is about to be your new favorite post-turkey treat.
On her website, De Laurentiis shared her Lemon Olive Oil Pie recipe, which looks oh-so-good. “Silky, bright, and a little unexpected, this pie takes inspiration from classic Key lime, but with a distinctly Italian twist,” De Laurentiis explained. The pie is made with a shortbread crust with a lemon custard and whipped cream, with olive oil to balance the whole thing.
To make it, grind shortbread cookies in a food processor, then add sugar and melted butter to create the crust. Bake in a pie pan while you work on the filling. For this part, you’ll need lemon juice, olive oil, condensed milk, and a few other ingredients, which you’ll whisk together and pour into the crust once it’s out of the oven and cooled.
Now it’s time to bake! Simply pop it in the oven, then give yourself at least 3 hours (or overnight) to cool in the fridge. Before serving, mix up some whip cream and spread it over the pie, adding a garnish of lemon zest and a drizzle of olive oil, if you prefer.
This pie is so good, you’ll wonder why lemon wasn’t part of your regular rotation before!
