Kath Demolishes Real Food • Kath Eats


Tis the season for eating real good food!

I’ve been enjoying cooking (and eating) in my new house. And my new dining table has a pretty surface and some really great morning light that I am excited to use for recipes! I thought it might be fun to do a “Kath Eats Real Food” round up many of the meals I’ve had in the past few weeks here!

Breakfasts

Chocolate Peanut Coconut Yogurt Bowl

Loved this combo! I mixed 5% Fage with peanut butter and Ancient Nutrition Chocolate Whey and added coconut, vanilla granola and blueberries (gotta get fresh fruit or veggie in every meal!) It was like a PB mousse!

Oatmeal Bowl

Classic KERF chia seed oats with blueberries on top.

Green Smoothie + Nespresso

I love an all-in-one smoothie. This one had banana, spinach, whole milk, oats, chocolate whey, collagen, and a little peanut butter.

Nespresso

I dusted off the Nespresso post-move and am loving it! I heat a little half and half in the microwave and it makes cappuccino quality foam when the Nespresso goes on top! This is the newer model of the one I have (that is over 10 years old!). And these are the pods I buy.

Cinnamon Chip French Toast

Birch is absolutely obsessed with Great Harvest Cinnamon Chip, so I turned it into French toast. So good!

Peanut Butter Oatmeal

This was the first thing I made here – naturally it was oatmeal!

Simple Yogurt Bowl

Fage 5% with PB, granola, and grapes. Great combo!

Lunches

Fish and More Fish!

I’ve been eating so much tuna! It’s just so easy for protein, and there are so many ways to eat it. My go-tos are Fishwife and Wild Planet Bowls, especially after I found such a great deal on Amazon – I stocked up!!

I love that the Wild Planet bowls can be mixed in with greens or eaten right out of the tin with a side of chips and carrots.

And the Fishwife hot smoked salmon was SO GOOD! It was in a sauce made with Fly By Jing sichuan chili crisps which I used for a dressing over arugula and blue cheese crumbles.

Dinners

Lemon Shrimp Pasta

Mazen and I made this pasta together inspired by a dish I had in Sardinia this summer. It. was. so. good. I’d like to type up the recipe for you all!

The basics are simple: spaghetti noodles, sauteed shrimp, spinach, prepared pesto and a little half and half to make it creamy. But the secret ingredients were lots of lemon zest, lemon juice, and MINT! I can’t even tell you how good the mint was. I never would have thought to add it if I hadn’t had a similar combo in Italy!

True Nature Meats

I am also so excited to tell you about True Nature Meats!

These meats come frozen and are already cooked – with delicious flavors! All you need to do is thaw them in the fridge and then heat in a pan! They have lots of different options, and most of the flavors are $11-12 each – not bad for protein for a few servings. (We got 4 servings out of ours). I cooked the Pollo Asaco chicken thighs and made tacos. Mazen and I loved!

Man I love Roots! This was the Mayweather with BBQ tofu!

Chicken Parm

I let Mazen pick out one of the take-and-bake options at Wegmans, and he picked the chicken parm with pesto and mozzarella. We both loved this!

Gotta love a good takeout meal! Gimme all the plantains!
