Description
These roasted orange glazed carrots are naturally sweetened with fresh orange juice, ginger, and orange zest. A light, healthy vegan side dish perfect for holiday meals, Sunday dinners, and everyday cooking.
- 1 1/2 pound small whole fresh carrots, with tops (may use heirloom, multi-colored carrots or orange carrots)
- 2 tablespoons extra virgin olive oil
- 2 small oranges, juiced and zested (1/2 cup juice + 1 tablespoon zest)
- 2 teaspoons fresh minced ginger
- 2 tablespoons maple syrup (optional)
- 1/4 teaspoon salt (optional)
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375 F.
- Scrub carrots with a vegetable brush (don’t peel) and trim tops, leaving about ½ inch of tops on carrots.
- Place carrots in a 13 X 9-inch baking dish.
- Drizzle with olive oil and toss with tongs to evenly coat carrots. Place in oven and roast uncovered for 20 minutes, stirring half way through.
- While carrots are roasting, whisk together orange juice and zest, ginger, maple syrup (optional), salt (optional), and black pepper in a small bowl.
- When carrots have roasted in olive oil for 20 minutes, remove from the oven, pour the orange ginger sauce over the carrots, and toss with tongs to distribute. Return to oven and roast uncovered for an additional 15-20 minutes, stirring with tongs every 5 minutes, until tender and golden on surface. Texture should be firm on the outside, but tender when pierced with a fork.
